The art of lettering rock is over one hundred and fifty years old, not much has changed in that time, although we do now have the help of one or two labour saving machines.
Our Confectioners have over eighty years’ experience between them, and our owner, having worked for almost 35 years with the very best sugar boilers, still makes our candy today.
The photos below show a batch of rock being made in our factory. The process is the same when we make rock sweets, the only difference being that they are sliced into sweet size pieces and ‘twist’ wrapped.
The ingredients are mixed together and boiled in a copper pan. When the desired temperature is reached, the hot liquid is poured onto cooling slabs.
The colouring is added at this stage.
Once all the colours are mixed they are cut out and kept separate.
Some of the batch is aerated on a pulling machine. Flavour is added at this stage.
We layer strips of candy to make the letters.
Here we have the letter “K”.
And the letter “H”.
And an “A”.
Although it’s a bit unclear at this stage, this batch will say “THANK YOU”.
And it will have a yellow…
The words are built around the logo.
And then wrapped into the stripes for the outer edge.
The candy roll is transferred into a “batch roller”
From where it is “spun” by hand…
…into rock bars.
Or extruded by a “rope sizer”…
…to be cut into bite size sweets.
The sweets are wrapped on a machine into plastic free paper.
